For kitchens and caterers, dates are a versatile, shelf-stable ingredient that works from breakfast to dessert. Here is where they earn their place on the menu, and how to source them in the right quantities.

On the breakfast buffet

Whole Medjool and Barhi sit well alongside fruit, yoghurt and pastries. They keep their shape and look generous in a bowl.

On the dessert menu

Stuff Medjool with nuts or soft cheese, coat them in chocolate, or chop them into cakes and energy bites as a natural sweetener. Ajwa adds a darker, milder note to petit fours.

For banquets and mezze
