Chocolate-Stuffed Dates, An Easy Recipe

Soft Medjool dates and dark chocolate are a natural pair. This little treat needs a handful of ingredients and no baking, and the sweetness comes from the fruit itself.
Ingredients (makes about 12)
- 12 Medjool dates
- 12 whole almonds, or 3 tbsp of your favourite nut butter
- 100 g dark chocolate
- A pinch of sea salt (optional)
- Chopped pistachios to decorate (optional)
Method
- Slit each date lengthways and remove the stone.
- Tuck an almond inside, or pipe in a little nut butter, then press the date closed.
- Melt the dark chocolate gently over a water bath.
- Dip or spoon chocolate over each date and set on baking paper.
- Finish with a little salt or chopped pistachios and chill until the chocolate is firm.
Tips
Use large, soft Medjool so there is room for the filling. For a party platter, mix in a few Barhi for a golden, creamy contrast. Store the finished dates in the fridge, see our guide on how to store dates.
