Spring: blossom and pollination

The year begins with blossom. Date palms are either male or female, and the female flowers are pollinated so the fruit can set.

Summer: the fruit forms and ripens

Through the long, hot summer the small green fruit grows and slowly changes colour, softening and sweetening as it moves through its ripening stages.

Autumn: the harvest

When the fruit reaches its full, natural sweetness it is harvested, then sorted by hand. This care at the end is what keeps each box consistent.
