How to Pit and Stuff Dates

Stuffed dates are a quick, elegant treat, and they are easy once you know the trick. Large, soft Medjool are ideal because there is room for a filling.
How to pit a date
Slit the date lengthways along one side with a small knife, open it gently and lift out the stone. Do not cut all the way through, so it stays in one piece to hold the filling.
The best fillings
- Whole nuts: an almond, walnut or pecan.
- Nut butter: peanut, almond or tahini.
- Soft cheese: cream cheese or a little blue cheese for a savoury bite.

Finishing touches
Press the date closed, then dust with chopped pistachios, a little sea salt or coconut. Serve with coffee or on a dessert platter.
